A great quick fix for lunch full of flavour! Prawns a good source of protein and the avocado will provide your body with many vitamins and minerals including potassium as well as good fats.

Per serving

Handful of large ready to eat prawns

4 Cherry tomatoes cut in half

1 avocado

1 wholemeal pitta bread

Mixed salad of your choice

For Sauce

2 tsp of balsamic vinegar

2 tsp olive oil

½ tsp honey

Grating of garlic

Teaspoon of honey

To make

Combine the ingredients for the sauce in a small dish

Place the prawns in a bowl and add as much sauce as desired (save a bit for your salad)

Heat the pitta on the grill or in a toaster for 1 to 2 minutes

Once cooked in half and open ready to stuff

Fill the pitta with tomatoes, prawns and ½ the avocado

Serve with a salad of your choice – I used the rest of the avocado with some cucumber, beetroot and leaves.
